The plain Pad Thai keeps to eggs, bean sprouts, green onions and lime; the Curry Pad Thai dusts the same base with yellow curry; the Royal is the richer cousin at the top. The soups split comfort from clarity — a coconut bowl built on lemongrass, lime leaves and galangal, served with tofu, chicken or shrimp, and a hot and sour version with bamboo shoots, black mushrooms, egg and chilli.

The salads do the brightening. The restaurant calls its cooking contemporary Thai with one foot in the classical, and frames the craft as balance — herbs, spices and seasonings combined toward one harmonious result. The menu even carries a built-in order. Open with the Royal Pad Thai on familiar ground, add a Green Mango Salad for lift, then let the lime lamb bring the heat — a path from comfort to brightness to spice that a first table can walk without much coaching. The cooks trained in Bangkok, and the food reads like people who learned the whole grammar rather than a handful of greatest hits.

Day to day, Grimsby Thai works less like a destination than like a utility. The weekday lunch packages a main with soup, salad and a spring roll — the easiest value path, a full plate without over-ordering — which makes it an easy midday default rather than a dinner to plan around. The same kitchen keeps an active takeout menu, so the breadth doubles as a weeknight answer when no one feels like cooking. For a town that could just as easily have made do with one narrow noodle counter, the depth is the whole point: a table that cannot agree on noodles, curry and lamb still orders from one place.

None of this is glamorous, and Grimsby Thai does not pretend otherwise. The restaurant states its aim in three plain parts — good Thai food, genuine Thai service, affordable prices — and the cooking meets that brief by being deeper than a small Niagara town has much reason to expect.
