Order at NV Kitchen + Bar usually starts the same way: a plate of Sesame Pulled Pork Nachos lands in the middle of the table, and then the table has to decide what kind of night it is having. The nachos pull from both worlds the kitchen works in — pulled pork and house chips under cheese, pico de gallo, a sesame glaze, sour cream, and salsa — and once they are gone the menu forks. One direction is a real dinner: a ten-ounce New York striploin, plated as Steak Frites, seared to preference with hand-cut fries and chimichurri. The other is a shareable, thin-crust pizza night. A downtown Guelph restaurant and bar that plates a proper striploin is doing more than bar food asks of it, and that ambition is the first thing worth knowing about NV.

The food has range without losing its centre. Steak Frites is the cleanest main, but the comfort run underneath it is deep — Mini Burgers with cheddar and crispy onions, an eight-ounce chuck Beef Burger, lightly dusted Wings with the sauce on the side, Fish + Chips in a crisp beer batter, and a Brown Butter Mac + Cheese built on a brown-butter mornay with bacon, broccoli, and confit garlic gremolata. The pizza section carries its own personality on ten-inch thin crust: Hot Honey Chicken with pepperoncini, goat cheese, and a pesto base; Korean BBQ with pulled pork over creamy garlic; Apple Bacon with green apple and smoked provolone. Starters cover the rest of the table — Calamari with citrus aioli, Mussels in roasted red pepper butter, a Chef Board of cured meats and focaccia, potato curls made to order with sriracha aioli. Dessert holds the line too, with a dark, dense Sticky Toffee Pudding under vanilla ice cream and chocolate-caramel-banana Monkey Dumplings to close.

What the menu says about the kitchen is that comfort food here gets treated as cooking rather than filler. The gremolata on the mac and cheese, the chimichurri beside the steak, the hot honey and pepperoncini balanced against goat cheese on a pizza — these are choices, not defaults. Vegetarians get real paths instead of an afterthought: a Beyond Meat Vegan Burger, the Veggie Deluxe pizza, a Beet Salad with pickled baby beets, goat cheese, and candied pecans. The food menu marks gluten-friendly items and offers a gluten-free crust, though routine prep cannot guarantee allergen-free conditions for strict needs.

The bar runs as its own program beside the food, not as a wine-by-the-glass afterthought. House cocktails and classics, wine by the glass and bottle, draft beer, cans, bottles, cider, and non-alcoholic options give the drink side enough to shape a visit on its own. That breadth is why NV works for a group that can never agree: nachos, wings, a Chef Board, a couple of pizzas, and a round of cocktails let a table find several different meals at once, and nobody has to commit to the same plate. The patio, which the restaurant leans into through the warm months, gives that same flexibility somewhere to sit when the weather turns.

NV has worked the corner of Wyndham Street North since 2010, and the hours are part of what keeps it useful: open daily from noon to two in the morning, it can be a patio lunch, an early dinner, a round of drinks, or fries and a burger ordered well after most of downtown has gone dark. Guelph keeps fewer late kitchens than it has late nights. NV is one that answers when a table is still hungry at one in the morning, with the same pizza, wings, and Sticky Toffee Pudding it served at seven.
