Chang Noi's Pad Thai. Elephant Chicken Wings. A spicy basil plate the menu calls the Drunken Elephant Noodle. The little elephant the restaurant is named for — chang noi, in Thai — keeps turning up across the menu it anchors, and that is the first thing to understand about the kitchen on Queenston Street: it has a point of view, and it is not shy about signing its work. The name is meant as a small doorway into Thai culture, opened through the table. The cooking holds up the idea: Thai food cooked to a Thai standard, the dinner menu carrying Thai Select language and a standing note that most dishes can be made gluten-free or vegan on request.

The Pad Thai is the menu's headline dish and the kitchen's clearest signature — tiger shrimp, egg, tofu, crushed peanuts and lime folded into a thin egg wrap, the noodles cooked to order rather than held. The Elephant Chicken Wings arrive by the pound, deep-fried and tossed in a house sauce bright with orange zest, the kind of plate that anchors a table while the rest of the order lands. The Apple Salad reads cool against the heat: julienned green apple with red onion, mint, coriander and sweet pepper, finished with roasted cashews and a house dressing — closer to a Thai salad's sharp, herb-forward balance than to anything sweet.

Past the signatures, the dinner menu runs the length of a proper Thai list. Curries come in green, yellow and red, each open to chicken, pork, beef or tiger shrimp — the yellow built on potato and onion and the gentlest of the three, the green and red carrying more chili. The spicy basil noodles turn up as the Drunken Elephant Noodle, the house twist on the drunken-noodle family. And the group end of the menu is deep: Crab Rangoon — eight crisp wontons of cream cheese and imitation crab with sweet chili sauce — spring rolls, and a hot and sour soup that all travel well across a shared table.

The wordplay never gets ahead of the cooking. The elephant motif runs through the signatures, but the food underneath it is not dumbed down — standards are offered at full strength and then bent to the guest, with gluten-free and vegan preparations available on request and allergies handled by conversation rather than by disclaimer. The weekday lunch special, served eleven-thirty to three, is how much of the neighbourhood meets the kitchen first — a midday plate at a downtown pace before the dinner menu opens the range back up.

Chang Noi's opened on Queenston Street on October 23, 2009, and has cooked in downtown St. Catharines for the seventeen years since. It runs as a neighbourhood operation with a named team: Ping keeps the front of house, and Kit carries the kitchen's continuity. The dining room holds to its own clock — lunch and dinner through the week with an afternoon pause between, Saturday given over to dinner alone, Sunday dark — the habit of a kitchen that cooks each service rather than holding food through the day. For the nights that stay in, an online ordering page keeps the takeout side moving.

Drinks follow the same logic. The bar pairs Thai beer with wine from the Niagara benchlands a few minutes up the road — a small, local answer to the question of what to drink with a red curry, and an easy reminder that this is Thai food cooked in the middle of wine country. It is not a pairing most neighbourhood Thai kitchens bother to make. Order a green curry and a glass of Niagara white, and the little elephant's whole premise sits on the table at once: Thailand and the bench, in one unhurried downtown lunch.
