The current lineup rewards that attention. Kenya AB Central, a Central Highlands lot from smallholder and washing-station production, leads with cocoa, honey, and blackcurrant — the bag to reach for when you want lift and fruit in the cup. The Colombia Field Blend traces to San Agustin in Huila, brought in through the importer Monkaaba and including Sonia Bolanos of the El Limon farm, and carries caramel, cherry, and a subtle liquorice edge. Brazil Fazenda Barinas, a naturally processed Cerrado Mineiro lot from the Marcio Borges family, runs toward milk chocolate, nougat, and lemon. For a deeper, more familiar cup there is the house Dark Roast — molasses, baking spice, and caramel, built to hold up as filter coffee or espresso — and a decaf Brazil Mogiana for anyone who wants the ritual without the jolt.

Naming the farm is the tell. A shop that lists the washing station, the importer, and the family behind a lot is making a claim about how it buys as much as how it roasts — a Q-graded discipline and sustainable importer relationships rather than a generic house blend bought by the sack. The origin bags rotate as lots change, which is why the shelf reads current rather than fixed, and each one is written up for the brew methods it suits, from filter to espresso. It is the difference between a cafe that serves coffee and one that has opinions about it.

The setting earns some of that reputation on its own. The tiled interior and branded visual identity make the place feel designed rather than defaulted into, and the window seats and steady community feel pull a mix of regulars and travellers passing through this corner of Georgian Bay country. It reads as a deliberate stop on a weekend drive — close enough to Collingwood and the Blue Mountains to catch a regional crowd, specific enough to be worth the detour rather than the nearest drive-through.

The shop has been roasting since 2019, and it is owner Alix Haddy's operation today, cafe side and roasting side both. The look has stayed deliberate under her — the pink tile, the branded bags, a counter that treats a donut as seriously as a single-origin bag. The playful streak is just as real. The Fruit Loop Donut is the counter's bright move, a small-batch nod that keeps the coffee literacy from turning solemn, and a rotating seasonal donut, a butter croissant, a blueberry scone, and a lavender or beet latte give the pastry case its own reasons to stop in.

What began as one Thornbury cafe now reaches past Bruce Street. There is a second pickup point in Creemore for a simpler coffee run, a wholesale program supplying other kitchens, and an online shop that ships the bags farther afield. The through-line is the roasting: whether the coffee is poured at the counter, carried out in a bag, or brewed in someone else's cafe, it traces back to the same small batches run after the day crowd goes home. For a town on the edge of Georgian Bay, that is a lot of coffee built on one pink-tiled corner.
